We’ve learned a lot about olives, even if we don’t know everything yet! Since 2020, we have been harvesting olives from our own terraced 6-hectare olive grove and producing our own oil.
We are happy to share our knowledge and provide information about varieties, cultivation, care and, of course, harvesting and oil production. The difference between „normal“ and „industrial“ harvesting and oil production is included. Of course, you can also learn about the use of the oil.

Use of olive oil
Olives are known to be very tasty and above all healthy; they contain sodium, calcium, magnesium, phosphorus, iron and also vitamin A and folic acid. The benefits are mainly due to the antioxidant bitter substance oleuropein (glycosylated seco-iridoid, phenolic bitter substance) and a high proportion of monounsaturated fatty acids or omega-6 fatty acids.
Olive oil is probably most commonly used to prepare salads and is characterised by a fruity to bitter taste. It can also be used to pickle vegetables such as peppers, courgettes or aubergine.
Contrary to popular belief, olive oil can also be used for frying. Just make sure that you don’t use oil that has been freshly pressed, as it still contains suspended particles which can cause spitting. Olive oil – like all oils – should not be heated too high.
